Finally, Ray Salti is set to open Bollo Woodfired Pizza in the former Sorrel Urban Bistro. After all the brouhaha, the signs are up, the pizza oven is in and staff is running through their paces. As of today, an opening pizza and cocktail tasting is set for May 5 between 6 p.m. and 9 p.m.
Besides the now-shuttered Sorrel, Salti owns the popular Ray’s Grill in Fulshear and an expanding network of Pepperoni’s Pizza joints. Salti insists Bollo "will be totally different than Pepperoni’s. It will be more upscale with cocktails and small plates, and, of course, the pizza will be cooked in an authentic VPN wood burning oven."
VPN stands for Vera Pizza Napoletana, a certification given by the city of Naples for living up to its specific standards of pizza making. And this is one big oven. Team Bollo had to use a forklift to get it inside. Keep an eye on the Bollo website as the opening nears.
