So maybe it's sort of a good thing that meat man, Chris Shepherd's Underbelly isn't open yet, because it landed on a list of Bon Appetit's "Top 5 Hottest Restaurant Openings in America in 2012." The magazine's Restaurant and Drink editor Andrew Knowlton anticipates the "in-house charcuterie, on-premises butcher shop, and fresh cuts of goat, lamb, veal, and--of course--pork from his [Shepherd's] own herds."
