modular.jpgIf you're a fan of wings (or "wangs" as some prefer to call them), tonight's competition between Les Sauvages pop-up chef Justin Bayse and food truck The Modular is where it's at. The Modular, who has been in a challenging mood (ramen competition with Soma Sushi most recently) has an interesting cooking technique - sous vide. Which means if you head out tonight, you'll be eating wings that have been cooked for hours in a vacuum-sealed bag immersed in water. [Facebook]
