German Mosquera Out at Roots Bistro

Only a week after receiving a two star review from Houston Chronicle critic Alison Cook, chef German Mosquera has been replaced at vegetarian-friendly Roots Bistro by former BRC chef Chandler Rothbard. As reported by CultureMap's Sarah Rufca last night, Rothbard is already implementing changes to the menu, telling Rufca that "It's no longer like a science project over here."

While no one denied Mosquera's talent, Rothbard alluded to rumors of Mosquera's erratic personal behavior when he said "We burnt some sage in this bitch getting rid of the negative energy."

Another problem is that Roots has received up and down reviews since Mosquera launched the concept. In her June review, Houston Press critic Katharine Shilcutt praised some of the food but complained about high prices and small portions for other dishes. Rothbard seems poised to bring some consistency to the kitchen, saying "Everything is in place, now is time for us to refine."
