Jonathan Jones is getting settled in as the chef at Monarch in the Hotel ZaZa. While a hotel's menu has to have certain crowd-pleasing dishes on it, Jones has been able to put his stamp on the menu with signature items such as Third Coast Gulf Ceviche and "Texas Kobe" pot roast that features Heartland Wagyu beef. He's even sourcing fresh pasta from industry favorite Paulie's. [Sidedish]
