Since Underbelly is the most highly anticipated restaurant opening of the year, it couldn't just open. It had to open in phases. Today at 4pm, the wine bar portion of chef Chris Shepherd's latest project will be officially ready for business while the restaurant won't open to the public until March 5.
For now, visit the wine bar any time, starting today, between 4pm until 2am (except for Sundays when the business will regularly be closed) for a limited food menu.
Once the full experience is finally available, guests can expect views of the very open kitchen and curing room, which Eater Houston got a preview of in early February.
Rumors are also circulating that hot chef semifinalist Daniela Soto-Innes may be joining the kitchen at Underbelly after her recent departure from Triniti, although neither party will confirm nor deny.
