Yesterday, the Eatsie Boys announced that they are officially making the move from rolling food truck to a brick and mortar location in Montrose. Chef Matt Marcus won't reveal exactly where out of respect to the current business (let the speculation begin!) but he did share some details about the team's plans.

First of all, "the sandwiches are going to be next level," said Marcus. "We're going to be using more advanced techniques." The casual cafe will offer breakfast, lunch and dinner, with sandwiches, salads, charcuterie and their housemade ice cream on the menu plus a serious coffee program. The E-boys are aiming for a June opening and will be serving food from the truck until then.

"We're never going to put that truck away. That's our foundation and it made us who we are today and we'll always operate it," said Marcus. It will still make frequent appearances at the future 8th Wonder brewery and at special events.
