Houston Modern Luxury profiled whole-animal-centric Underbelly's butcher, Peter Jahnke, who wields a cleaver as elegantly as Meryl Streep accepts Oscars. Jahnke confesses that he spends "up to 100 hours a week" in the butchering room at Underbelly, that he does not like "parking meters, uninformed vegetarians" and "damn near every bar on Washington," but does like "the Houston Ballet," and his "grandfather’s cleaver."
