When the University of Houston decided to remodel the University Center, the school needed some way to replace the five restaurants that serve a large percentage of UH's 30,000 students. They turned to three food trucks: Bare Bowls Kitchen, The Waffle Bus and Bernie's Burger Bus to fill the gap. [29-95]
