This week every Eater site across the country will pay tribute to diners' favorite service people in a feature called Front and Center. In Houston, a group of locals have written essays that will appear throughout the week. They highlight front of house staffers from across the industry, from locally owned ethnic restaurants to national chains, which shows that diners appreciate when someone takes the time to establish a personal relationship with his or her customers, regardless of the setting.
Got a favorite front of house worker? A server or bartender who remembers your order every time you walk in. The barista who makes particularly kick-ass latte art.
