Chef Jonathan Jones revealed today that he's been hired as the new executive chef at the Monarch restaurant in the Hotel ZaZa. The move comes only two weeks after Jones left Mexican restaurant Concepción. While Jones has hopped from Beaver's to Xuco Xicana to Concepción in recent years, he has always attracted a strong following for his inventive cooking. It's not a surprise to see him land on his feet so quickly.
Reached by Eater, Jones said that he'll take two weeks to assess the team and menu. He anticipates rolling out a fall menu "based on farm to table produce and proteins" with an "aggressive Gulf to table seafood program."
