Following up on Eater Austin's story from yesterday about Tim Dornon leaving Uchiko to join Paul Qui's new venture QUI, Uchi culinary director Philip Speer confirms that Houston sous chef Page Pressley is heading to Uchiko to help replace Dornon. Although Speer was tight-lipped about Pressley's exact role, Speer said that Pressley is "being groomed for bigger things in the future." Also changing spots is former CINQ chef Jeramie Robison, who has been promoted to chef de cuisine at Uchi Austin from his role at Uchiko. Speer says that Robison is "a great long term fit" at Uchi.
As for Uchi Houston, Speer says that he couldn't be happier with the work being done by chef de cuisine Kaz Edwards and his sous Michael Castillo. Expect to hear more about Uchi Houston as it prepares to celebrate its first anniversary next month.
