Billecart-Salmon Brut Rosé, $250 at Tony's. It's such a focused and brilliant wine but also wonderfully food friendly, with the bright acidity that I crave in any wine. When rosé Champagne is great, like this one, it balances its tannic character with classic minerality and fruit. This wine has that "unbearable lightness" that I look for in the world's greatest wines, powerful muscular elegance, like a ballerino.I'm also a huge fan of the Taittinger La Françiase that Sean Becks always has a steal of price at Hugo's. I LOVE doing Champagne and Mexican, such a great pairing.
