Although the owners of The Dirt and El Gran Malo Lea McKinney and Steve Sharma had been planning to open El Big Bad in early October, it seems that the Wolf will head downtown in early November instead. With it will be Ben Rabbani who will join the staff as the new chef. While Rabbani recently announced that he would be joining the staff at The Marque, it turns out that he will work with El Big Bad's consulting chef Randy Rucker for the first few months of business before permanently taking over the kitchen. Rucker has already started crafting the menu and has hosted a number of weekly tastings where some industry friends joined for samples of quinoa, black beans and fajitas.
A recent release spills the details on some upcoming menu items:
There will be an amazing campechana with gulf shrimp, huge pieces of crab, avocado, duck empanadas with black beans, chihuahua cheese, pickled mustard seeds and sour orange, whole grilled market fish and a roasted chicken with smoky tomato sofrito, pickled red onions, quinoa, sunflower seed pilaf. The menu will also include a simple yet flavorful torta selection including lingua with crispy beef tongue, cotija cheese, cilantro crema, black beans, watercress and pickled carrots.
Both chefs have worked together in the past, and we're confident that they'll be impressing us with their gastro-cantina menu.
