Chef Ryan Hildebrand on Plans to Open FM 903

Triniti chef Ryan Hildebrand has been busy with his upcoming restaurant, which will be where Ruggles Green used to stand on Westheimer. CultureMap's Eric Sandler reported that the project will be called FM 903, and that construction should begin in January of next year. As far as the offerings: "FM 903 will be built around a wood-burning oven that 'strays from traditional Texas fare' with the addition of pizzas and pastas." Weekly pop-up events beginning November 2 will feature executive pastry chef Samantha Mendoza, who will be a part of FM 903.
