The Houston Chronicle's Alison Cook awards former Triniti pastry chef Jose Hernandez's La Balance an admirable three stars in her review of the Katy restaurant. "It's tempting to say his little restaurant means Katy dining has come of age, but that depends on whether the affluent Cinco Ranch clientele will support this jewel in its midst. Four months in, weekend dinners are crowded, but weeknights and even the lovely Sunday brunches can be sparsely populated.
