Houston Chronicle restaurant reviewer Alison Cook's dish of the week is ham and eggs at The Pass. The dish is a new addition to the restaurants eight-course, $95 tasting menu; it combines a gigantic pork crackling with a twist on caviar and the usual accompaniments. Cook calls the dish "amusing and beautiful and quite unexpected." [29-95]
