In this video segment that aired prior to the revelation of Food & Wine magazine's class of Best New Chefs, Underbelly chef/owner Chris Shepherd explains the inspiration for the restaurant's signature Korean braised goat and dumplings. He takes reporter Manuel Bojorquez on a tour of Korea town: to the kimchi lady at Kong Ju and through the food court at Super H Mart. Shepherd explained his relationship with these other chefs as follows: "It's not just me that makes this restaurant happen. It's all these people. Whether they believe it or not or whether know it or not, they're supporting this restaurant."
