Looks like Eleven XI, the Montrose restaurant that brings together chef Kevin Bryant, formerly of The Capitol at St. Germain and L'Olivier, and general manager Joe Welborn, ex-Soma Sushi and the Rockwood Room, will open the first week of May in the former Bibas Diner space on West Gray. When it does, the restaurant will offer a raw bar, house-made ice cream, house-made jerky, traditional entrees and tasting menus that run from five to nine courses.
