In what has to be more or less the least surprising Houston restaurant news ever, sommelier Justin Vann's first restaurant client for his PSA Wines consulting service is Italian restaurant (and Eater 38 member) Paulie's in Montrose. PSA has assisted Paulie's existing wine buyer, manager Matt Zaldivar, by creating a list of all Italian wines that cost under $45 a bottle and instituting systems to better manage inventory.
