Sommelier David Keck gave Eater Houston a tour through Camerata: the wine bar next to Paulie's that owner Paul Petronella called "David Keck's playground." Although workers were still patching concrete and the bathrooms lack doors, Keck predicted Camerata will open in the next week or two. When it does, Keck and his team will be serving approximately 100 different wines: 20 of which will be available by the glass on a rotating, daily list. While the opening wine selections will depend on what distributors are able to supply, Keck estimates that approximately 20% of the bottles will be priced over $100, but he made it clear that his goal is to keep his inventory moving as much as possible.

In terms of the design, the two most noteworthy elements are the new entrance from the Paulie's parking lot and that the left side of the bar has been designated specifically to allow people who are sitting at tables to pick up items without having to reach over people who are sitting at the bar.
