According to Chronicle critic Alison Cook, Dax McAnear has left Triniti and will replace Antoine Ware in the kitchen at beer bar The Hay Merchant. The move reunites McAnear with the Clumsy Butcher family, as he was part of the opening team for Underbelly. McAnear will be responsible for executing Hay Merchant's new menu, which is set to launch next week after development by Underbelly's Chris Shepherd and Clumsy Butcher culinary director Erin Smith.
McAnear had been slated to run Triniti's casual sibling Brande, but, considering that restaurant, which, as Cook notes in her piece, "is scheduled to open this fall," remains an empty lot where Ruggles once stood, perhaps McAnear decided to give up waiting and moved to someplace that actually exists.
