Chef Philippe Schmit on the perfect club: "A great club sandwich can only be made with a great bread. That is why we bake our own pain de mie at Philippe. (The bread must be) well toasted with a crisp on the outside and moist on the inside." As for the fillings, Schmit says it needs "the right quality of sliced turkey and bacon. In addition to the lettuce and perfectly cooked hard boiled eggs, you want just the right amount of mayonnaise: homemade with a taste of virgin olive oil and Dijon mustard, which will bring the right contrast between the crunchiness of the sandwich and the soft filling. Home made potato chips and a spicy tartare sauce can be a great accoutrements!"
