WASHINGTON CORRIDOR— Max's Wine Dive has introduced a "gluten friendly" fried chicken made with a blend of gluten free flour and dried cauliflower fibers. it's served with mashed potatoes and collard greens. In order to minimize the chance for gluten exposure, the restaurant prepares the chicken in a separate area and uses a separate fryer.
