Executive pastry chef Samantha Mendoza might be the only 24-year-old in Houston who spends her free time consulting with Triniti's chefs on how to complement their savory dishes with meticulously crafted desserts. Now Mendoza will be representing Texas in the 2013 Pastry Live Competition, the only chef in the state to lend her talent this year.
Mendoza was trained under Robert Gatsby, formerly of Noe and Bedford, as well as award-winning chef Jose Hernandez, another former Triniti pastry chef, and one who recently opened his own spot in Katy.
Mendoza will compete in an exhaustive 2-day competition set in Atlanta on August 25 through 27.
