An Update On Ryan Hildebrand's Upcoming FM 903

After an announcement made well over a year ago, Triniti owner Ryan Hildebrand's new project FM 903 is finally underway, with construction estimated to begin next month. Like recently opened Coltivare, it will be a place that grows many of its dishes' ingredients on-site and focuses on simplicity and freshness. According to CultureMap, the restaurant was going to be known as Brande—now the name of Hildebrand's hospitality group—and the new name, FM 903, is a tribute to "Westheimer's history as a farm-to-market road." The upcoming restaurant will be located where the now-shuttered, controversial Ruggles Grill once sat on Westheimer. Hildebrand tells Eater that FM 903 will offer "rustic, farmhouse fare, largely derived from the production in the on-site greenhouse." His team will be highlighting the greenhouse-sourced ingredients "through fresh, minimalistic preparations." The restaurant will also boast an adjoining bakery that will supply the eatery with fresh breads and pastries daily, it will feature talented young pastry chef Samantha Mendoza at its helm. Mendoza has been busy offering weekend bakery pop-ups at Triniti that serve as a preview for what's to come at FM 903, and if those treats are any indication, this bakery is going to be good.

As for how FM 903 will compare to Hildebrand's current successful spot Triniti, he tells Eater that the forthcoming establishment "really only shares philosophical similarities: The standards for quality and execution. The food is warming and comfortable, simple." Once open, FM 903 will serve breakfast, lunch, and dinner Monday through Friday and brunch and dinner Saturday and Sunday. "We want people to see it as a place they can spend their days," he explains. "It will be a gastronomic destination as well as a place to just relax with a coffee and a pastry or sit in the dog-trot with a glass of wine and enjoy the breeze."

The very Texan logo is now prominently displayed on the temporary signage at the site, where they are expected to break ground next month. According to Hildebrand, he's expecting it to be open later this year, sometime around November.
