Back in October we introduced you to upcoming Midtown restaurant Cook & Collins, at that time they were anticipating a December opening date. They are now predicting a Jan. 20 debut, according to the Houston Chronicle's Greg Morago. Morago writes that the chef will be partner Jared M. Estes formerly of Crisp, who "boasts an enviable culinary background (graduate of the San Francisco Culinary Academy, his resume includes Bradley Ogden's Lark Creek Café, working with Seiji Wakabayashi of Ondine, and fronting his own restaurant Villagio Cucina in California)."
