Jeffrey Schaefer IN as Executive Chef at Line & Lariat

Downtown boutique hotel gains a new chef de cuisine.

Austin transplant Jeffrey Schaefer is in as the new executive chef at the Hotel ICON's Line & Lariat downtown, replacing outgoing chef Tyler Malson, who relocated back to his native Minnesota.

Schaefer will oversee all culinary direction for the award-winning venue, and he's in the process of overhauling the menus for the restaurant, L&L Bar, room service and catering options. Look for his distinctive stamp on seasonal offerings through the next few weeks.

Well known in Austin culinary circles, Schafer was a partner in Along Came a Slider, a food truck and catering business with a focus on sustainable and organic local ingredients. Right before his move to Houston, he was the executive chef at the Marriott Austin Downtown/Convention Center--Hotel ICON is part of Marriott's Autograph Collection group of hotels. There, he oversaw a staff of 60 in multiple food and beverage outlets. He's a longtime Marriott veteran; from 2002 - 2011, he worked at the Austin Marriott South, where he joined the team as a line cook and was promoted quickly up the line to executive chef.

He's the second new face in the last few months at the property, located in the historic 1912 Union National Bank Building. Back in August, Laura Weldon was named director of food and beverage, joining the team from her most recent post at the Hyatt Regency St. Louis at the Arch.

Hotel ICON has a history of launching chef careers; Bryan Caswell, Justin Basye and Jamie Zelko are all ICON alumni - which means we'll be looking for great things from Schaefer as he takes the helm.
