Biskit Junkie, the Oak Forest eatery from the owners of mac and cheese restaurant Jus' Mac, is on track to open soon. Shortly after the craft biscuits and waffles concept announced plans to open in April, expected summer and fall opening dates never panned out. Asked about the delays, Chris Alvarez, manager of Jus' Mac whose Sugar Land location recently closed, blamed the city and permitting.
Placing blame on the city and permitting seems to be the new excuse for many restaurants when it comes to providing an answer to promised opening dates. The excuse could be completely valid (Houston is experiencing a record year of building permit issuance), but if Alvarez is right and an inspector is all that's needed for the final step, Biskit Junkie should open in mid-January.
