Here today and gone tomorrow, that's typically the average lifespan of a trend, especially within the restaurant industry where one day cronuts are the hot food of the moment and something entirely different the next. As 2014 winds down, restaurant experts are laying out next year's food trends and Houston is already ahead of the pack. According to Wall Street Journal, 2015 may be the year of the chicken — heritage breed birds to be exact.

The Journal highlights Foreign Correspondents, the Treadsack owned concept opening on North Main in the spring, and its executive chef PJ Stoops, as being apart of the upcoming trend. Partnering with a local farmer, Stoops seeks to "
breed birds that may be not only the most authentic Thai chickens in the U.S. but the most authentic chickens, period," for his Northern Thai restaurant.
