In anticipation of Austin Food & Wine Festival, Underbelly chef/co-owner Chris Shepherd offers this instructional video on how to filet a fish. Shepherd will be participating in that annual food festival alongside Houston chef Monica Pope, owner of Sparrow Bar + Cookshop. Both local notables will compete in the Rock Your Taco event, where they will go head to head with chefs from all over the country and be judged by Graham Elliot, Christina Grdovic and Andrew Zimmern. Austin Food & Wine fest will be April 25 through 27, and tickets are still available in packages "Taste" ($250), "Savor" ($850) and the travel versions of each for those visiting Austin.
