After hosting a number of friends and family soft opening events, Montrose's new coffee shop Siphon Coffee will be certified open as soon as next week. Owners Michael Caplan and Edward Treistman have been putting the finishing touches on the interior and welcoming small groups in over the past week. The new spot, which is situated at W. Alabama across from Blue Bird Circle Shop (see the map at right), will be among the first businesses to open at that newly renovated Montrose strip center.
Coming right on the heels of Common Bond's big debut, this Montrose shop will also offer savory dishes, wine, beer and of course, coffee. "We are buying our beans local from Amaya, we will have eight craft beers on tap from Texas, as well as four wines on tap," Caplan says. They will also have "great morning and lunch/dinner" offerings, since former Brasserie 19 executive chef Amanda McGraw has set up their menu. A few months back, Caplan told Eater they would "brew coffee on a halogen-warmed siphon machine that extracts the oils and aromas like no other process. I have been interested in siphons when I first saw them in some of the best coffee bars in San Francisco and Seattle." While he is reluctant to share an exact opening date, he said they'd definitely be open next week. "[We'll] be open until 10 p.m. during the week and midnight on Friday and Saturday."
