When famed smoked meats guru Ronnie Killen (Killen's Barbecue/Killen's Steakhouse) showed off his brand new pit recently, many locals wondered what effect the new toy would have on the 'cue joint. (Read: Does this mean shorter lines?) We reached out to Killen, who shares the new pit specs. "The goal was to improve the quality of pork ribs," Killen says. The new addition is a one-of-a-kind pit made by Klose, and it will be used for beef ribs, brisket, chicken and more. While the new pit will be able to hold 800 pounds of meat at once, this won't mean shorter lines or longer hours.
While Killen and his staff work on breaking in the new pit in Pearland, they'll also be preparing for the next Saint Arnold BBQ Block Party on Aug. 31 from 11 a.m. to 2 p.m. at the brewery on the northern edge of downtown (2000 Lyons). Killen and John Lewis (La Barbecue in Austin) will be working the pits this year. Tickets are $50 and include a commemorative pint glass, 'cue from the pitmasters and Saint Arnold brews; purchase passes at Saint Arnold's website.
