In Upper Kirby, Paul's Kitchen Now Serving in the Old Haven Space

The restaurant has soft opened with a grand opening planned for Monday.

The kitchen at the former Haven/Cove location is bustling once again. Paul's Kitchen, the new concept from Paul Miller, owner of The Union Kitchen, opened last evening. Executive chef Paul Lewis along with chef de cuisine Matt Lovelace (Triniti and Osteria Mazzantini sous chef) are providing diners with a sneak peek through Saturday from 11 a.m. to 11 p.m.

Using ingredients sourced from local vendors— Slowdough Bread Co, Atkinson Farms and Black Hill Meats— Miller has created a Southern and globally inspired menu that includes pork belly with jalapeno and peach jam and potato salad; braised goat empanadas with avocado, arugula and charred tomatillo salsa; and lamb tangia with saffron, preserved lemons, red potatoes and ceci beans. Linzer crumble with seasonal fruit compote and Southern-style dobos (banana cake, praline butter cream, bourbon butterscotch, bananas, candied pecans) are among the sampling of desserts from pastry chef Kelsey Hawkins, also of Osteria Mazzantini.

Miller says, "[he's] really excited about Lovelace's house-cured charcuterie, bacon and sausages...and Lewis's chef's table, which is right in the kitchen overlooking the line. It's going to be an amazing dining experience."  The restaurant opens for full service on Monday, September 29, at 11 a.m.
