Just call David Cordua the King of Truffles. The Cordúa Restaurants executive chef (Américas, Churrascos)  grabbed the title Houston Truffle Chef of the Year during last night's inaugural Houston Truffle Chef of the Year Challenge. Hosted by Roederer USA, producer of the highest quality black truffles from Spain, chefs were "given 450 grams of truffles to create their dish," reports the Houston Chronicle. Out of the 20 chefs that entered, it was "[Cordua's] clever take on a Twinkie (brioche filled with a mascarpone egg cream and topped with shaved black truffle)," that impressed the judges and ultimately won him the title. Who knew Twinkies and truffles could work together?
