Steak & Ale...not sure if it will qualify as "Houston" restaurant but their Hawaiian Chicken with the hot loaf of bread served with the honey butter will always be missed...oh yeah and they had a great salad bar too!
Also Bill Bennett's Steakhouse, Sizzler, Bonanza, Farrell's Ice Cream Parlour.

Kaplans [and also] Fiama on 45 south. Only because as a kid I heard the servers (ladies) all wore lingerie and served steaks. This may have been urban legend but I always wanted to know for sure.
