Looks like Bramble won't be opening this winter as first expected. Chef Randy Rucker parted ways with beverage specialist/consultant Eoghan Dillman last month, delaying the long-awaited restaurant's debut. Houston Chronicle, who first broke the news, calls it a speed bump, but could it be more than that?
Dillman was instrumental in building interest for the talented chef's upcoming venture, setting up a number of sold-out pop-up dinners and other events, landing on everyone's list of Houston restaurants to keep an eye out for. So what could have caused what appeared to be a harmonious relationship? It's unclear but Rucker vaguely tells the Chronicle, "it just didn’t work out." Despite being a partner down (Thomas J. Holmes III still remains), Rucker presses forward, more determined than ever to open Bramble. Hopefully he'll succeed, avoiding the same fate as conāt, the highly anticipated restaurant post Bootsie's that never came to be.
