Check Out The Republic Smokehouse & Saloon's Menu, Now Smoking in Midtown

The group behind 51Fifteen, Hearsay Gastropub and Mr. Peeples launch a barbecue concept.

Barbecue dreams and wishes are now a reality in Midtown. Stepping up to the plate to feed the masses, The Republic Smokehouse & Saloon. It's the latest concept from Landmark Houston Hospitality Group (Hearsay Gastro Lounge, 51fifteen and Mr. Peeples) and one of several barbecue newcomers popping up on the scene as of late. The barbecue joint, which quietly soft opened March 24, replaces Blackfinn American Grille.

The concept behind The Republic Smokehouse & Saloon is similar to Bone Daddy's House of Smoke with midriff-showing waitresses and barbecue, only the barbecue is much better at this higher end knock-off. All the credit goes to Cedric Williams, locally renowned pitmaster who once owned Williams Smokehouse in Acres Home. Brisket, chicken, St. Louis pork ribs and a host of other smoked meats grace the menu, include the humongous brontosaurus rib.

Offering more than smoked meats, the extensive menu caters to non-barbecue The barbecue joint also offers a variety of flatbreads, sandwiches and salads. Main dishes to try include the smoked fried chicken, smoked duck breast served with whole cracked grits and braised veal shanks. Wash it all down with a Sam Houston (bitters, simple syrup, Buffalo Trace Bourbon), Bluebonnet (Bulleit Bourbon, lemon, blueberries, blackberries, soda and simple syrup) or any of the 16 specialty cocktails on the menu.

The Republic Smokehouse & Saloon will hold its grand opening Saturday, April 11, complete with live bands and of course, lots of barbecue.
