What to Expect When Fluff Bake Bar Debuts This Month

Baking maven Rebecca Masson is expected to open her Midtown storefront soon with sweet and savory treats.

Midtown is this close to receiving its first taste of pastry chef Rebecca Masson's desserts. The baking maven whose wares are currently available at Revival Market and a handful of coffee shops in Montrose, is expected to move into her stand-alone bakery and retail shop this month, reports Zagat.

Situated between Russo's Pizzeria and forthcoming Minuti Coffee within Post Midtown Square at 314 Gray, Fluff Bake Bar will become Midtown's premier bakery for decadent cakes and baked goods. Masson will occupy a 1,200 square-foot space, serving her signature sweets like to couch potato cookie and Veruca Salt, the sinfully rich devil’s food cake layered with salted caramel buttercream and topped with pretzel crunch and pearls.

Aside from plated dessert service and charcuterie and cheese, revealed months ago, below are several more features to come in a few short weeks, according to Zagat.


  • In addition to seating inside, which will seat up to 24, dessert lovers will be able to savor each bite of their treats in the shared courtyard behind the shop.

  • The shop will host monthly pop-up dinners with guest chefs from across the country will be featured. Austin's Philip Speer (Uchi and Uchiko) and Amanda Rockman (Nico Osteria in Chicago) are among the confirmed chefs on the roster.

  • Fluff Bake Shop will exclusively use Katz Coffee and a curated selection of wines and beers from Antonio Gianola (Houston Wine Merchant)
