Paul Miller's Gr8 Plate Hospitality Group (Paul's Kitchen, Union Kitchen, Jax) is getting into the food truck game. The Rollin' Kitchen will serve Louisiana-style comfort food, courtesy Mike McElroy (D&T Drive Inn) who used to work at Redfish and Commander's Palace in his adopted hometown of New Orleans.
Expect classics like muffaletta, a soft Royal Bakery roll stuffed with house-made mortadella and salami, with provolone and a fresh chopped olive and a chunk of chicken brined in lavender then cooked over hickory wood for a subtle smoky flavor. Also: boudin balls and po'boys made with deep-fried, short rib meat. From the hand cut fries to the salad's remoulade vinaigrette — all items are made from scratch.
