In his natural habitat at Oxheart, Chef Justin Yu is generally creating infused broths and delicate vegetable preparations. Next week, though, the newly-christened best chef in the Southwest will go a much more traditional route for one night only at one of Montrose’s favorite bars.
On Wednesday, May 18, Yu will take over the kitchen at Anvil Bar & Refuge for a steak and potatoes pop-up dinner. Until supplies run out, Yu will serve up eight ounce ribeye steaks, mashed potatoes, and corn to the first 100 folks through the door. Seeing that Anvil is a cocktail bar, plates are first come, first serve.
Anvil’s Justin Vann will curate a special wine menu featuring reds by the glass, but of course there’s a novel twist. Vann has selected four “break even” bottles, ranging from $200 to $1,000 each, that will be available for three-ounce tasting pours at cost. A selection of six martinis – a perfect pairing with steak – and reduced pricing on one of the best brandy lists in Texas will also be on offer.
If you’re feeling like doing a little balling on a budget, this sounds like as good a time as any. Yu will start serving dinner at 6 p.m. on Wednesday until 8 p.m. or the food runs out.
Intricate vegetable preparation will resume on Thursday.
