Ronnie Killen Is Bringing A Barbecue-Steakhouse Hybrid To Houston Proper

In the quiet little suburb of Pearland, meat whiz Ronnie Killen has built a veritable restaurant empire with his endlessly popular steakhouse, barbecue joint, and most recently, Killen’s Burgers. Now, Killen is setting his sights on Houston.

CultureMap reports that Killen is planning to bring a concept called STQ to the former Bramble space on Voss. The concept will “blend live fire steakhouse cooking with barbecue techniques and elevated service,” and Killen compares it to Chef Tim Byres’ Smoke in Dallas or The Granary in San Antonio.

Killen will install a wood-burning grill and (of course) add a smoker to the kitchen, but doesn’t anticipate any major renovations to the STQ space. As far as the chef is concerned, Killen isn’t quite ready to announce who will serve as his second in command at the steakhouse-barbecue joint hybrid, but you can likely expect for him to hire from within.

STQ is expected to debut by the end of October.
