New Food Truck Brings Thai Rolled Ice Cream and Dessert Tacos to Midtown Park

The brand new, bright pink trailer arrives later this month

Mico’s Ice Cream will soon bring the Thai rolled ice cream trend to a brand new truck at Midtown Park.

The mobile ice cream spot, from the minds of owner Kimico Frydenlund and her husband Chris, will set up shop at Midtown Park at 2811 Travis Street later this month. Mico’s occupies a vintage trailer that has been painted a highly-visible bright pink. Like other Thai ice cream shops, Mico’s will pour an ice cream base and toppings onto a super-chilled metal plate, then mix them together and form those iconic rolls of ice cream. After the rolls are done, they can be piled into a waffled, taco-shaped cone or cup.

As far as flavors are concerned, sugar junkes can look forward to inventive mixes like the Gimme S’more, made with vanilla ice cream, graham crackers, Hershey’s chocolate, and toasted marshmallows. Simpler offerings, like strawberry-banana and cookies and cream. Diners will also be able to suggest their own flavors, which could eventually end up on the truck’s menu.

Mico’s Ice Cream will host its official grand opening party on February 17 from 2 p.m. to 5 p.m.
