Hubbell & Hudson Bistro in The Woodlands is working on a major changeup, from its name to how it cooks its steak. Houston Culturemap breaks down all the upcoming changes, speaking to the restaurant’s executive chef Austin Simmons.
Apparently, there’s confusion between the more formal spot and its fast-casual sister restaurant Hubbell & Hudson Kitchen. So soon, Hubbell & Hubbell Bistro will be known as Tris (a name inspired by Simmons’ daughter) and Hubbell & Hudson Kitchen will just be known as The Kitchen.
That’s not all: the restaurant will take a 12-day break for a renovation, closing on August 25 and reopening on September 7 with a new look and a new menu. That includes new steak options, including a steak that’s slow-roasted and seared using dry-aged beef.
