Hummus Republic, a California-based chain that’s obsessed with its namesake dish, is plotting to expand into Space City.
An update to Hummus Republic’s website indicates that the chain is making a major push into Texas, and two Houston locations are in the works. No addresses are listed for those locations just yet, but these mysterious new destinations for Mediterranean cuisine join outposts of Hummus Republic that are set to open in Austin and Dallas.
As far as the food is concerned, hummus is, obviously a focal point at a place with a name like Hummus Republic. Four different types, including hummus spiked with spicy harissa or kalamata olives, will be on offer. Chickpeas play a starring role in most of Hummus Republic’s build-your-own dishes, which start off with picking a bowl of organic wheat pilaf, garbanzo beans, or salad. Then, diners choose up to three different hummus options before loading up their bowls with falafel, vegan “beef,” or chicken shawarma. The bowls (or wraps) can be topped with everything from feta and tabbouleh to diced beets and fried chickpeas.
