Vibrant, a new restaurant serving colorful, veggie-packed fare, will debut in Montrose next week.
The restaurant will open its doors at 1931 Fairview, serving breakfast and lunch only for now, with dinner service set to follow later in September. Vibrant’s menu is packed with popular superfoods, ranging from “adaptogenic” herbs like ashwagandha to turmeric and heirloom rice. Grain bowls, smoothie bowls, salads, and breakfast dishes dominate the menu, along with a selection of healthy sweets like muffins made with root vegetables and “tahini bliss balls” spiked with spirulina.
A menu of drinks will serve a variety of “elixirs” spiked with cordyceps (a mushroom believed to have brain-boosting powers) and reishi (another mushroom with purported health benefits), along with milks made with coconut and sesame seeds at the restaurant. Coffee, matcha lattes, and a rosemary-grapefruit spritzer are also on offer.
Vibrant is set to open at 7 a.m. on Monday, August 27. In the beginning, it will operate from 7 a.m. to 4 p.m., with lunch starting at 11 a.m. daily. Expect a full dinner menu later in the fall.
