Tlahuac, a new pop-up focusing on Central Mexican cuisine, has officially opened its doors at restaurant incubator NextSeed Space in Greenway Plaza.
The temporary new restaurant, pronounced “kla-whok,” is a project of former Xochi and Underbelly pastry chef Stephanie Velasquez and chef Nicolas Vera. The duo decided to open the restaurant after a culinary trip through Mexico City, according to a press release, and started hosting pop-ups back in November. It replaces a pop-up outpost of popular food truck the Waffle Bus, which operated at NextSeed Space in March.
Vera will oversee the savory side of the menu, crafting a Veracruz-style mole sauce that ages for 200 days and, if recent pop-ups are any indication, that sauce will be slathered onto crispy chicken wings, among other dishes like ribs al pastor. Velasquez will focus on the sweets, baking up cacao-spiked conchas and other Mexican pastries. Here’s hoping that some of her innovative desserts, like matcha tres leches, also make an appearance on the menu.
Tlahuac is now open daily inside Greenway Plaza until the end of June.
