Just a year after opening its first standalone location in the Heights, The Waffle Bus has a second location in the works, this one slated to open in The Montrose.
Permits filed with the Texas Alcoholic Beverage Commission show a second Waffle Bus location planned for 1540 West Alabama. That’s inside the Alabama Row development just across from the Menil Collection’s parking lot. Waffle Bus owner Phi Nguyen confirmed the project, saying that the new location would include a full bar and an ice cream parlor. He said he’s shooting for an April 2021 opening.
The Waffle Bus was first founded as a food truck in 2012 and gained raves throughout Houston for it’s folded waffle sandwiches and other sweet-and-savory treats. The first brick and mortar location, founded through NextSeed fundraiser, opened in November of 2019 at 1835 N Shepherd Drive. Moving into a stationary kitchen allowed Nguyen to expand the restaurant’s menu, including items like a chicken fried bacon BLT, breakfast waffle sandwiches, and sliders served with waffled french fries as buns.
The Heights location also introduced a bevy of sweet dishes, including shakes made with cereals like Cinnamon Toast Crunch, Nutella-banana sandwiches and Vietnamese iced coffee. With new that the Montrose location will include both an ice cream shop and a full bar, expect even more creative concoctions from Nguyen and his kitchen staff.
